good eats


Mrs. Janie's Penne and Sausage in Cream Sauce

Ingredients:

1 tbsp. of butter
1 tbsp. of olive oil
1 medium onion
3 cloves of garlic
1 lb. sweet Italian sausage
2/3 cup of white wine
1 can (14 1/2 oz.) of diced tomatoes
1 cup of whipping cream
6 tbsp. of chopped fresh parsley
1 cup of grated Parmesan cheese
1 lb. of penne


Melt together the butter and olive oil in a large pan. Chop the onion, mince the garlic, and saute until they begin to turn a golden brown. Begin cooking the pasta in a separate pot.


While this is going, begin removing the casings from the sausage and break them into pieces. Add the sausage to the pan and brown until cooked all the way through. Drain any excess fat.

Add the wine and simmer until most of the liquid evaporates. This should be about 2 minutes.


Add the tomatoes and simmer for another few minutes.


Stir in the whipping cream (this my favorite part!). Simmer another few minutes to let the sauce thicken. Tip: half and half works great, too, if you're looking for fewer calories.



Toss in the penne with the sauce and cook for another couple minutes.

Season to taste with salt and pepper, if you please, and stir in 4 tbsp. of the chopped parsley and 3/4 cups of Parmesan cheese.



Sprinkle the rest of the cheese and parsley on top. Voila! Pretty and absolutely delicious pasta!
